This wine was made from 100% Cabernet Franc grapes from the Mystic Winery Vineyard. Bright ruby red colour with aromas of sour cherry, blueberry, and lavender, combining with subtle pantry spice notes and a hint of toasty oak. The palate is elegant and complex with fine structured tannins and balanced acidity which leads to a long and pleasant finish.

Winemaking
Carefully hand selected fruit from the Cabernet Franc Vines situated on the eastern side of Mystic Vineyard. The grapes were gently de-stemmed, and hand sorted before being delicately delivered to the small tanks on the lower level of the winery. The must was then cold soaked to extract colour and flavour compounds from the skins. Following the cold soak, the must was warmed to allow fermentation, and the juice was pumped over the skins to extract more colour and tannin. Malolactic fermentation was completed, and the wine was matured on lees for 18 months before bottling.
Food Suggestion
Fresh roasted meats such as vanilla, smoked meats, spicy sausages, strong flavored cheeses, etc. It can also be paired with Chinese dishes such as handmade lamb, a preference for abalone and chicken casseroles, pickled vegetables and fresh meat pancakes, and Penglai’s eight major dishes: Chinese toon braised pork.
